The Winter Garden

I miss our Summer vegetable beds, now tucked up snuggly in their voluminous white sheets.  I’m mad and Australian enough to try and grow passion fruit here, but it involves wrapping the vines up well against the possibility of a rare maritime frost.  Our gardener got very enthusiastic, or perhaps it was my picturesque grasp of Spanish, so even the hardy winter veg have found themselves similarly swaddled; Leeks, cabbages, celery, beets, fennel, lettuces and spinach…

Even as I remain faithful to my roots, (my toes far prefer warm sunny sand to slippery snowy pistes), as a cook, I can’t help but translate these winter spoils in my mind into delicious Comfort food – cauliflower cheese (my husband’s favorite), vichyssoise, gooey French onion soup…I love winter cooking with its slow simmers, braises and stews.  The aroma of herbs and warm kitchen steaminess. Entertaining centres around the fireplace, slow flavors, red wine and warm company…
